Tuscan Baked Eggs

Tuscan Baked Eggs with Tomatoes is a combination that makes a fantastic brunch


Extra-virgin olive oil
1/4 cup chopped red onion
2 tsp. finely minced garlic
1 tin chopped tomatoes
Chopped fresh thyme
4 eggs, at room temperature
Grated parmesan cheese
Chopped fresh chives


Heat olive oil in frying pan over medium heat, then add red onion and cook 2-3 minutes, until the onion is starting to get soft. Add minced garlic, cook about 1 minute, then add canned tomatoes, chives and chopped thyme.

Carefully break the eggs into the tomatoes and spoon the rest of the tomato mixture carefully over and around the white part of the eggs, leaving the yolks showing. Cover with a lid and cook for 5-7 minutes.Sprinkle with Parmesan cheese and serve with toasted ciabatta bread
